White Chicken Chili

It's official... I suck at keeping a blog :) So much for documenting my daily (or even weekly!) adventures, right?? I guess it's time to play catch up. A few weeks ago, I went in search of a truly spectacular white chili recipe. Let me tell you that there is no shortage of white chili recipes. However, I found that not one of them possesses that little extra *something* that I was really in search of. Finally, it occurred to me that if I am the only one who knows what I want in a white chili recipe, perhaps I should create my own. I borrowed from several other recipes (I have no idea which ones they were now... I just remember certain ingredients being used in various recipes) and eventually ended up with this:

Wow... was it delicious :D and super simple, too!! It only had to cook for about 45min and it was magnificent with just a little cornbread and a dollop (or thwack.. haha) of sour cream. Mmmm mmm mmmmm.
